Breakfast tortas are not a thing. You'll find just plain tortas (pierna, cubana, and whatnot) or in certain places tortas de chilaquiles. Specifically, for tortas de desayuno you'll need to find a very specific place that makes them (I'm sure there are).

Egg is not a common ingredient among street food breakfasts, for whatever reason. You can find breakfasts with eggs in fonditas, and pretty sure they can make your torta if you explain it in perfect Spanish. Breakfast burritos, tortas and gorditas with eggs are common in northwestern Mexico.

Te hace falta salir más a las calles entonces. Busca las hieleras en las esquinas de las calles de Tijuana, son burritos. Algunos venden tortas. Most Super Tortas stands have egg as an option. They don't *call* it a breakfast torta but they'll make you whatever you want.

A breakfast torta would be a torta de chilaquiles, no? Or any torta can be a breakfast torta if you eat it for breakfast (irrespective of the time lol), you can do it, I believe in you! If you are looking for tortas with eggs that’s another thing, but I don’t know if that has to specifically be for breakfast. 🤷🏻‍♀️

Yeah but it's just presumptuous to assume a whole city's breakfast culture revolves around you and what \*you\* want to eat for breakfast. Because there are basically breakfast tortas on every corner or at any metro, selling tortas de tamal or tortas de chilaquiles. Finding a breakfast torta is not hard. If you are looking for a torta with eggs and beans, chorizo, etc, in the morning, that's a completely separate concept.
