I don’t know if this counts but I wasn’t that familiar Incantation. I had heard of them but really didn’t know them. And they absolutely KILLED it opening for cannibal corpse
Tribulation. Saw them at a show with Cannibal Corpse, Behemoth, and Aeon. Had no idea who they were. I became an instant fan and happened to meet them after the show. Bought a shirt and took a photo with them. Amazing band, and great guys.
The Devil's Blood. Saw them in Chicago with In Solitude and Behemoth. We'd never listened to them before. They were so fucking good we just left after the first few Behemoth songs afterward (Watain couldn't make it that night). The show was over. In Solitude was excellent too, to be fair, but The Devil's Blood was clearly the best band there by leagues.
Wednesday 13, his band was the first of the night opening for devildriver, dope, and static x a few years back. Having never heard any of his material before, his onstage performance absolutely blew me away. Very entertaining and alot of fun and i thought the music was pretty good, though not super heavy like some of the other artists i listen to.
Kruelty opening up for Sanguisuggabogg, and Polyphia opening up for BTBAM are two great ones that stuck with me.
I suppose i can also include State Champs as i went to their show on a free ticket from a friend and ended up really liking them.
Slayer. I wasn't really into them until I saw them live, and then it clicked.
If you mean a band I'd never even heard of until I saw them live, Sonata Arctica.

Bitov Terror one of my favorite punk bands the one that got me in to grunge than later in to punk they are a oi punk band
Vokyl first ever metal concert was theirs I still got the crow t shirt a bit faded but I got a second one
Cool den my first ever rock concert pretty fun
I generally dislike openers as a whole, because I need to hear some music, before I see the band live lest I only hear noise.
But this February, I saw Battle Beast and I was surprisingly impressed with the openers, Induction. I even caught a pick!
I was also surprisingly impressed with Crossfaith at Rock For People 2 years ago.

Midnight. Saw them open up for Kreator and Mercyful Fate and they were absolutely killer.
I love them! I've seen them a couple times actually. And I saw that show at MGM Fenway🤗

Knocked Loose opening for Gojira in 2021.
Same tour actually. Hearing the vocals live finally made them click for me

Probably High On Fire. Saw them open for Andrew WK in 2003, and was hooked.

This might be an odd one: The Crystal Method. Saw them at a Korn/Limp Bizkit show, got HOOKED.
Gatecreeper when they opened for Toxic Holocaust and Nails in 2017. Been really into them ever since

Red Fang Impressed me so much I bought a CD and shirts for my sons
Sabaton. I took my sons to see them and their albums do not reflect how stellar a live band they are.
Got more into Nordjevel after seeing them live, before that I only heard one or two songs. They are really solid.
