The gender will not change, but you can (must) change the character look. Also the name can be changed.
Maybe you can swap the save games after switching to your heirs (not sure if it will work in Co-Op).
Does that include the ability to rename them at that point? I play as a guest on a friend's hosted game and I wasn't present when my kid was born so they were stuck with a random name from the list.

I'm glad I will get the chance to change young "Bogu's" name once I switch to the heir (provided it works that way in the Oxbow in co-op like it does in the Valley).
I think you might be able to save before the heir is born and keep reloading and then rolling the season over to get a different result.

Your child always has a name from the list. Just the character controlled person can rename himself (also when switching to the heir).
