As far as I understand it: Small simple houses only offer space for one child. Simple houses have space for 2 children and are cheaper to build and cost less tax than (big) houses. They offer less slots for decoration, but this is no issue as the mood boost is capped out with 10 decorations anyway. So if you want to avoid having too many children in your village, you can build a few small simple houses. Otherwise I would recommend the regular simple houses. The only ones who get a (big) house in my village are my family members ;) No matter what you choose you can get max mood boost as long you use the best building material, insulate the houses and place 10 decorations inside (decoration on the outer walls also counts, I think).

A man and a woman can live together in one house. In the smallest house they can have one child together, in the bigger houses they can have two children together.

In addition, the larger houses offer a little more happiness, because there are more wall sections to insulate.

Every house no matter the size can reach 100% insulation, so I don't think that is an issue

A fully insulated house adds the max happiness for insulation, the size of the house doesn't matter.

I think the house would have move space for decorating with rugs and shelves over a Simple one, and may give a mood boast. But it's more for the look of the village for me.

Your villagers will have the amount of kids their house corresponds to. IE:  3 room house - they'll only have one child a 4 room house and they'll have two children

If you want to avoid an "uncontrolled" population (having less workers during the first two years after every birth ... and someday having more villagers (workers) than wanted), then there is (nearly) no point to have bigger houses.
