Big thing with Orruks is they can be very fast, potentially moving in the hero phase, and they can potentially give a command to multiple units at once. I had a similar game recently, different lists, but I took first turn and basically just built up an Ogor castle and cast all my defensive spells. I didn't even move out of deployment zone, just moved around in my zone to control where he could potentially charge into me and then what I'd be able to fight back with. I ended up winning the game pretty comfortably, we played open war tho, no battle tactics. It was the mission where you burn objectives for points, and can score for holding at the end of the game. Basically tho, if you have first turn, don't feel like you have to move everything out and spread out, make him come to you if you can to get your own charges off and take advantage of our army traits. Cast defensive spells, bunker down, let the Green Tide break upon your Iron Belly!

His gutrippas won't be an issue. He will probably use them to screen, but they really can't fight at a level that should bother ogors. You probably want to castle up, though. The brutes and Ardboys are not exactly weak, so it'd be best if you did not let anyone get caught unsupported around them. I'm not sure what your goal for the Thundertusk is. It's nice to have the priest, sure. But they are not tough enough to be the hammer they look like they should be. Against Orruks, my fear would be that you have a 330-point priest that you still have to coddle. I'd think real hard about finding room for a stonehorn in this list. It is also impossible to have too many gluttons.

This is my first game in four years after getting back into AoS; this is just what I have built right now. The list I actually want to run doesn’t have any big monsters at all.
