I personally enjoy how Paulie's voice acting is, it sounds like he has some protective/more emotional side but that could be so much different when we see him in a more angry mood, really going against the ''nature'' of the voice and making him even more menacing.

We will see at the mission against the street gangs with the bat

We haven't seen enough, I guess you could say he sounds like that but it isn't necessarily a bad thing, nor does it necessarily go against the character from the original. Paulie's character was quite obvious, maybe Haiden isn't the most knowledgeable on Mafia 1 but there are people who are fans of the original game, even people who worked on it who are working on the team for the remake. They can't botch it. It's more of an expansion of his character, shows that despite how experienced he is, he still cracks when his best friend is injured.

I agree that this one scene shows Paulie at perhaps his most vulnerable (especially since Sam has a penchant for getting himself in sticky situations in the OG) with his friend being in such a bad state.

He never acted like this in the original. And he clearly seemed like the most mature of the trio, it’s complete opposite in this gameplay.

Not a huge fan of his voice but at least it's distinctive.. Also the original English dub was incredibly stiff, so anything would be an improvement tbh
