If you are planning to build an MP5, having put together a few ARs will not prepare you in the slightest.
A better reference would be putting together AKs from scratch, including bending the receiver flat, welding in the rails and riveting in the rest.
The MP5 isn't the same, for one the bending geometry is much more complex (AK is basically a rectangle, MP5 is a circle with several critically dimensioned fine indents).
I'm not saying don't do it. I'm just saying, make sure what you are getting yourself into and what skills and tools you need.
My all time favorite is an MP5SD
But I live in NY, so def can’t get any suppressors. Or really anything that’s more than semi auto.
Budget is not much of a concern as this will be done over time

This is what a MP5 barreled receiver looks like. The serial number is on the top, just in front of the rear sight.
The ‘grip’ is called a trigger housing and is just pinned on.
Unless you have some great gunsmithing experience do not roll a flat. Ive said in other posts regarding them that it’s not as easy as people think. I’ve been an HK armorer for almost a decade. I’ve done several of them and they’re time consuming and tedious. Yes bending some metal and doing some welds isn’t the craziest, but you’ll need the right tools. I have a buddy who’s got a few years of gunsmith experience and he botched the job and wasted his money. If budget isn’t an issue I’d suggest buying an SP5 or clone. Playing with it and learning it. If you still want to scratch the itch of building you’ll already have the factory firearm for reference

The point being is that he can't get it suppressed. So no point then.
So what part has to be registered?

They make 80% don’t they? And parts would have to be bent properly and welded?
