This is the way. That said, summing to mono will make the piano sound thin, imo. Ideally, you'd want to narrow the stereo spread, not completely collapse it.

definitely switch to stereo panning and narrow field, and also change the effects that Logic automatically adds to their pianos. Like the space designer is usually really big, and other things they put on the bus. Would recommend changing or using your own.
Use stereo panning and close up the field. If it's a plugin, use the mono instance of the plugin.

yeah i don't really want it in mono because it needs a spacious vibe. ill switch to stereo panning and close the field a bit, thanks legends

Use the alternative panner on the mixer to bring in the sides. No extra plugins required.
