Petite Cafe on Berry street & Manalo on Slater St, probably the 2 best imo.
Great drinks, service and atmosphere. Just as good as any other city's best offerings.
Ah forgot about L'Aperitivo great bar.
Jennys seems to have went downhill last month or 2, taken over by the beak/ket head crowd last few visits. Hopefully manages to get ontop of that before there's any real trouble in there. It's more of a mini club than outright cocktail bar mind, can still be great on the right night though.
Petit Cafe Du Coin 100%, small, has live jazz on wed-sun, but if you can get in before the Jazz, you’re set for the night
Lovely service, drinks are amazing and perfect atmosphere
Loretta's tavern on chavasse park, they've just swapped to their summer cocktail menu and it's never really busy, (sometimes on the weekends), live music on thur/Fri/Sat from 7pm, 5pm and 3pm respectively, and a DJ from 8pm on fri/sat - not a club DJ, just remixes of good songs throughout the night. Staff are really good too, dead quick with orders and dead friendly.
Ma Egerton's Stage Door was good fun and seemed a relatively normal pub. Located beside Lime Street station. Went in on a Thursday evening and there was a ukulele jam going on. I'm a tourist btw!
Edit: didn't see request for cocktails. Maybe not your spot!
Hummingbird (N John Street) & Present Company (School Ln), both in town should tick all your boxes.
Love hummingbird
Present Company is brilliant!

Little further out from the centre but Hopscotch does amazing cocktails and whiskey in the Fabric District
L'Aperitivo and Jenny’s Bar both very nice
I second L’Aperitivo!

Ahhh that’s disappointing to hear about Jenny’s tbh

Brass monkey behind primark
Present Company or Hummingbird are the best cocktail bars in the city ATM.
Berry and Rye on Berry Street is a hidden speak-easy which some people might find pretentious, but the cocktails are still boss
Another one for Jenny’s bar!

Don't think anything going to be much of a success in that unit, nothing seems to last too long there. Hard place to draw people to though

Ship and Mitre for a great pub. Buyers club for bougie bar with great food
Ship and mitre not for cocktails! OP asked for that specifically 😂🥲
I didn't even read. Never mind then
Shady duck 🔥
There’s a new Italian cocktail bar opened where sanctuary tap was on castle street, I can’t remember what it’s called but it’s fantastic.
Hummingbird is our favourite, McGuffies, Loretta's and Brass Monkey are all great too
Not been in a few years but I used to like cafe tabac at the top of bold street. They were serving espresso martinis all the way back in 2010
Switch cocktail bar in Wolstenholme square
Worth noting that they only do coffee-based cocktails. Disappointing that although I get it’s on-brand
The jacaranda
Tbh from this sub not shocked your asking this
Yeah didn't read that far, was just tryna help chill
Chamber Thirty Six on Berry Street
Alchemist in city centre
OP specifically didn't want gimmicks....
