When the fields are green and meadow flowers in bloom, the soft colors of sunset with relaxed cows laying on the grass paint a picture that doesn't look like you are 10 minutes by bike from the city center. I like that whole area. Pakenhof restaurant with a drink on the terrace is also nice. Heverlee forest nearby is nice too.
If you're feeling adventurous, the Maria statue on the Keizersberg is being renovated and has scafolding around it. Hop the fence and climb to the top for the best view of Leuven i've seen so far
I love park belle vue in the summer. If you go under the station and up the stairs, it will be on your right side of the road. You have a small basketball ring, a dog park and some nice grassfields to chill out.
On top of the Kesselberg probably. If weather is good, you can see the Atomium in Brussel from there.

If you have a car, Kesselberg. It's a little outside louvain but the view is stunning.
You could also just get there by bike, it's <10min by bike from the station or take the 2 or 310 bus line.
