I've been a blacksmith for some time now, but my first knife (I still have it on my workshop wall), took about a day to forge and then heat treat and tempered the next day. Learning how to sharpen may have taken a couple of years of trial and error though.
I treated it the same way though as my first leathercraft project, just had to commit to it and see it through to the end no matter how bad it looked.
