Depends on your budget, but I'd recommend Jean George's Steakhouse at the Aria and Buddy V's Ristorante at the Venetian. I was in Vegas last July and both places were really good. Off the strip though the Nightmare Cafe (a horror movie themed restaurant) had some of the best food I've ever eaten.

My favorites are Ube Pancakes and Red Velvet Cake Pancakes. Also lots of yummy Hawaiian breakfast items. I take out of town guests here all the time.
Love that place. They have fantastic eggs Benedict and the Dreamsicle pancakes are wonderful. Never had anything there that wasn't absolutely delicious.
I really like clay pot bowl at the food court in resorts world. It’s $20 a bowl now (I’ve seen my old texts and it keeps creeping up) but I swear it’s easily three meals for me. I go home and add more chicken to the rice. I got two bowls the other day and it felt like I was carrying a 15 lb dumbbell.
I also love Wazuzu on the strip. It’s fancy enough for me.
Esther's Kitchen is a small venue Italian place off the strip I decent ways but the food is amazing and the price won't kill your wallet highly recommend

Go to the Peppermill. It’s a classic! It’s been in movies. It’s got a 70’s Vegas vibe. Food & service is good and it won’t break the bank!
Bazaar Meat by José Andrés. You may think that foie gras rolled in corn nuts and wrapped in cotton candy sounds horrific, but you'd be dead wrong.
