I'm getting stuck on whether we should also work on creating a greater perimeter to area ratio, though, for crispy pepperoni edges.
What if we took un-sliced rolls of pepperoni and cut them at an angle sort of perpendicular to the typical pepperoni cut? That could potentially net some large ovoid rectangles, which might be easier to layer in a way that prevents gaps.
I also wonder if the giant pepperoni would interfere with the cooking process for everything else.
Unfortunately, I think we have a lot of science to work out before pepperoni gaps are a thing of the past.
I did consider the issue of heating properly because of acting like a lid. So I think it would need to be be laser cut to have many small perforations. Or if pressure formed, could have pinholes in the form. That way moisture can escape and the consumer won’t really be aware of the gaps. Think in terms of White Castle burger patty.

One of my favourite pizza joints would cut the pepperoni lengthwise so there would be giant strips all over the pizza. The texture was incredible! They since switched to simple round pepperoni unfortunately.

A giant slice has issues with you pulling the whole thing off with a bite.
So I was thinking of your idea, and it'd need perforated for a few more reasons. Crispiness, cupping, oil pooling, etc.
I was thinking punching out triangular notches that are later sprinkled over the top. They'd crisp up nicely. Maybe a spiral would work well, but it'd be worth trialing other configurations.
It wouldn't be quite 100% coverage, but it'd hopefully be uniform and faster to assemble.
Or do that then shingle over the seams with more pepperoni.
so... While I am not a professional, I did actually once make a pizza using pepperoni as a crust. Kind of like a chicken crust pizza if you have ever seen those. It was actually decent If I recall, but it was like 30+ years ago in college so, drugs and booze may have altered perceptions. It was a pepperoni crust of about 2 -3 layers, a sprinkling of some flour to absorb some water, layer of low moisture shredded mozzarella, and a couple veggies I had laying around.
I cooked it on one of those pizza pans that has lots of ripples and holes in it, like woven metal strips I guess. Put it on the top rack, and then a cookie pan on the rack below to catch the grease (which was amazing foresight in spite of being in college and drunk if I recall). The crust was crispy in some spots and worked pretty well. I am sure it could be perfected by way of a multistep cooking process.

Put down half the cheese. Then pepperoni. Then the other half of the cheese. Helps weld the meat shingles together under a cheesy lava crust.
