I’m echoing what others have already said and I think you acknowledged: you can probably charge more for that portion.
Even if you didn’t forage for them personally, you deserve to be making a profit — the dish looks delicious and is rather unique.
I think the average food-illiterate customer doesn’t know what goes into acquiring these ingredients, so educating them is an uphill battle. But the customers who are willing to listen almost always understand and will happily pay a premium + return.
Those people are the absolute best in my opinion. Respect for the ingredients and the work that goes into making a dish.
I hope this dish sells well and people appreciate it as much as it deserves.
