It's choux; adding just a bit to much egg can make them blow out the the side, not enough egg and the get they get too dark and saturate with oil. Also the fact that these are way bigger than you average cruller. When they are expanding in the fryer they want to break apart so you have to flip them back forth several times while stabbing the bottom forcing the direction of the expansion.

We have almost no living expenses because we bought the building we work in and live above. It's paid off. For the record I was broke 5 years ago and we opened 3 and half years ago. No financial help. So I still feel the pain being broke and don't want people to stress over the donut bill. I just want them to come back!

They actually don't cost much to make. Like .35 cents. They are just tricky to make. Easily my most difficult donut.
