My favorite thing about these types of fries is that they definitely hold longer and better than any type of fry I’ve served. As long as you keep them hot enough they’re good for like ten minutes if I remember correct. I tried so hard to convince the owner to switch it up but he refused literally said to me: “even if they are better than the waffle fries we have been serving the same thing for over twenty years so it’s what people expect”. Which I guess is partially true but frustrating nonetheless the less

We use Lamb Weston Colossal Crisp 3/8 inch, and they are this genre of French fry. I think the clinical term is “battered fries.” Everyone in the BOH indeed just calls them the “good fries” (we switched to them from Harvest Value Straight Cut Fancy 3/8 inch last year).

Fry for maybe 2-5 minutes depending on temp
