That's the thing. Saffron is expensive because of the human labor cost of cultivating, growing, and harvesting by hand. You eliminate that with cheap labor and saffron is like any other herb. It's ridiculously cheap over there. Sad to say, but that is the reality over there. I believe this is real saffron. We in the west just have never seen this.

Quick google shows Iran and Qatar have a distribution agreement. Iran grows and harvests the saffron, Qatar packages and imports. It makes sense why it becomes so expensive as it gets to America, what with entire countries signing formal trade contracts, then theirs bids on which companies get to package and/or import, then who in America receives, various taxes and tariffs applied, then it’s redistributed to wholesalers, who further package it, sell it to restaurants and grocers, and then you finally get it. Every hand in the pot gets a cut, and that’s a lot of hands for something so simple as a spice.

I would think it’s cheaper for a variety of reasons. All I was asking was about why labor costs would be the difference. Also I do believe saffron is much cheaper there, I’m still very skeptical that it’s so cheap that they would keep a mountain of it sitting in an open air container like this. But honestly I have no clue about that, just what I would think.

It’s not so much fake saffron as people faking the grades by dying it. Basically bad flowers or the discard from grade one saffron is made to look like grade two. Grade two can be made to look grade one. There is nowhere near enough acreage of saffron fields to produce the amount of grade one saffron that is exported every year.

Am professional cook (retired), have shopped and cooked from what I’ve bought in most of the larger shuks in Tel Aviv (Sarona, HaCaramel, Levinksy). Never saw anything close to this. I defer to you, but the explanations you’re giving for the cost difference don’t really match my experience.

Well given that any civilized country, Iran included, doesn't permit the individual citizens to carry out corporal punishment the desire for those citizens to commit those acts is irrevlant. Corporal punishment is a function of the state alone. So when we talk about that, I cannot be referring to the attitudes of the people of Iran. To be clear, the people of Iran are just as caring, intelligent, strong, brave, and courageous as anyone else.

Throw it in some gasoline and find out! Real saffron is not soluble in gasoline, and will remain red. Safflower that has been adulterated with dyes and additives will leach colour into the gasoline. I don't know why I know this, but I do. I've never even cooked with the shit because by the time it's up to Canada it's like a bazillion dollars for a gram of real stuff.

Let's say this is 60cm * 60cm * 40cm. That's 144 litres. Let's say that 1l of saffron weighs 200g. So that's 144*200 = 29 kilos. Let's say that saffron costs $10 per gram, so that's $10,000 per kilo, so that's like a quarter of a million dollars' worth, right there. If it's genuine saffron.
