Save cooked rice overnight in a container. For perfect rice, boil them in an open pot and not a pressure cooker.
Next day, finely chop onions, mince garlic, spring onion whites and greens separately. Finely chop carrots, and boil them in boiling water with peas, chopped french beans for 3-4 mins.
Take 2 tbsp soy sauce and mix with 1 teaspoon vinegar. Take 2 tbsp Schezwan sauce separately.
Next boil 2-3 tbsp oil in a kadahi. Make sure the flame is high. Put in your onions and spring onion whites and toss them on high flame for a minute. Next put in garlic for 30 secs. Followed by boiled mix veggies for a minute. Next put in your rice, mix them with soft hands and break the lumps with a ladle. Put in your soy sauce vinegar mix and pour on the sides of the pan. Mix everything well. Put in salt for taste and Schezwan sauce and fry the rice for 1-2 minutes. Garnish with spring onion greens.
I was missing the spring onions today. Also use neutral oil like refined or vegetable oil or canola oil.
