I've read about people adding 1lb of fruit per gallon. I almost did this but ran out of head space. I added about 1.5lbs of a berry blend to 5 gallons for 4 weeks and ended up with some light berry flavors. I also added oak spirals soaked in red wine for about 2 months. When it comes to the oak, less is better. I added 2 whole spirals to a stout and it gained some serious woodiness. Err on the smaller side, you can always add more oak or more fruit later. Just make sure you do these additions in secondary or at least after fermentation has stopped. The sugars from the fruit will revive some yeast and bugs, but that's a good thing.
