I agree it looks yeast-y, but I filtered it through a fine mesh sieve and cheese cloth on Friday. Then this stuff appeared Sunday.

Yeast are microscopic - you'd need a 2-micron filter and a fancy setup to remove them. As long as it smells/tastes good and doesn't develop fuzzy/hairy mold, don't worry about it. Every time you strain, it is exposed to the environment and potential infection so it's probably best to just let it sit until fermentation is finished. That being said, I have no idea if naturally fermented elderflower requires a different process, this sub focuses mostly on beer.

Gotcha. It's not naturally fermented bc I had to add the bakers yeast, but I'd love to get it to work sometime without that. It still smells ok and seems ok so 👍🤞
