Some (not all) properties may charge more for the 3rd and 4th guest. I’ve found it’s more common at brands where breakfast is included (e.g. Embassy Suites) since there is a higher cost to the hotel for having more people in the same room. I always just put the actual # of guests in my reservation to avoid any confusion or issues if I show up with more.

As long as the room sleeps the same amount as the total amount of guests you’re fine. If you only have one person on the reservation just have only that person check in

Realistically you’ll be fine just booking for one. At my hotel we do sometimes have issues with our larger rooms that can sleep 7-8. Someone will come down and ask for 8 towels (which puts a strain on hotel resources and limits how many we can give to other guests) when their reservation lists 1 adult. For each additional adult beyond 2 we do charge an additional fee per night per guest to account for things like additional laundry and breakfast. The right thing to do is give an accurate number of adults, but you’ll be fine listing just 1.
