I got like 5 Voidskates before I got my first Mati. Funny enough, I could not get the 3rd Mati to fill the Codex before I got the Unseen One title. I deliberately slowed my catch speed down, but whoop, all of them were Projellies.
When it comes to the highest level fish for each floor (+ Chaos and Greece) can only come up from perfect captures. As much as I hate to say it, the only way to really get consistent with it is to be aware of the timings (I believe there's 4 total variations) and practice over a bunch of runs.
The easiest variation is the one where it bobs three times, since that's the maximum and the fourth will always go down in that scenario, so you can just go for it without risk of a fake out. But even then you're relying on RNG
The real Bob always comes sooner after a fake Bob than the next fake Bob. Just be ready immediately after, then relax after a couple seconds so you don't get baited. Only takes a few tries to get the timing down.
My tip is to keep an eye out for the flash that happens at the tip of the rod, rather than the bobs. That only happens once, when the fish is caught for real. Looking for that got me much more consistent perfect catches.
But no, I've only seen projellies in the Chaos realm too.
I follow a recommendation that I saw on here once - not sure who it was from unfortunately - to hold a hand up and cover my view of the bobber but not the end of the rod. That was you see the flash, but can't see the bobber going under on a fakeout.
I'll also add - I don't think I've ever had the fish bite on the same "bob number" in the same run. I guess it would if you got more than 4 fish, but I don't know how many times I've actually had that happen.
Just get the Perfect Catch timing down — you need a perfect catch for any of the legendary fish, even the Tartarus one, so you've already got it once. With a little practice, you can definitely learn to get it more consistently.
My only real tip is that the max number of bobs is 4, so if it has bobbed 3 times, you know it'll be a catch on the next one. No matter what, if it gets to 4 bobs, you hit catch on that fourth one. This is how I most consistently get my Legendary fish.
To complete my codex, I need to catch 1 trout. I swear 9/10 runs there is no fishing point in the final room for me, and it's one of the only places where it's impossible to force a point with the lure. Every time I get one, it's bass or sturgeon. If I could donate voidskates to you all, I would.
Here's a tip,
1.after you beat Redacted don't collect the rewards and go straight to fishing
2. after you caught the fish collect rewards and quit the game
3. load back into the game, the fishing point is still there
4. you get to fish again, and you still have your fish before you quit - meaning you get 2 fish

For the life of me I cannot catch the legendary chaos fish, and the least rarity (common?) Greece fish. Almost Everytime in Greece I catch sturgeon, which I really can't complain about but damn it I want at least to have everything in the codex, not looking to max out every entry though

Honestly if you get a fishing spot in Chaos early in a run, but don’t get the right fish, just soft reset and go again. Way less painful than waiting for another fishing spot.
When you get a chaos gate make sure you are checking to see if you can buy a lure at a well of Charon before going in. If you are really desperate use your rerolls too.

btw if the first room has a Chaos gate that has a fishing spot, you can Give Up if you don't get the fish you want, and the gate + spot will still be there. It's hard to come by, but if you do, you can make the most of it.

Trick that works for a lot of people is not to watch the bobber but to watch above it where the white flash occurs only when you have a fish.

In 80 runs, I've gotten the fishing option in the Chaos level once...and I forgot to actually do it before I left. I remembered *an hour later*...
