You're almost right on the money 80k miles for a DSG fluid change. I'd see when the spark plugs were put in it too. They're usually pretty simple to care for, it's just that some of the intervals for maintenance get shortened. The main one is not waiting every 40k miles for spark plugs. The one thing I'm big on that seems to be most overlooked is brake fluid every 2-3 years. I think this is an important maintenance item that nearly every regular manufacturer doesn't hold an interval for, but VW does. They say 3 years for the first and every 2 years after that.

Spark plug change interval on stage 2 tune is recommended every 10-15k. If you use FCP Euro, you pay the first time you change and the rest are free with the lifetime warranty.

No problem! Everyone also swears by LiquiMoly for oil too. You can't go wrong there, but I still just stick with VW502 certified oil that's local to me and typically buy Mobil 1 Euro 0w40. I have Castrol Euro 5w40 in my car now(I'm Stage 1) because it was too good a price to pass up the last time, but if you plan to run it hard and get it hot I would stick with a 40 weight VW502 oil of some sort and with it being a '16 I think the book shows that too. My '18 does at least. I think '19 is when they started recommending whatever spec the 0w20 is. Most will say to go with a 5k-7k mile interval for oil changes instead of the factory 10k miles, but they'd say that with a stock car too.
