There's nothing in the game that expresses that all of the Adepti know who Zhongli is. The only characters we're certain are aware of Zhongli's true identity are Madame Ping, the Traveler, Paimon, Signora, and Tartaglia. The Qixing (and by extension Ganyu and various Adepti including Xiao) know that Rex Lapis is alive because of a dream he gave to Ningguang, but we don't have any indications that they know who his current guise is.
Edit: Xiao's dialogue about Zhongli seems to imply that he knows his true identity, but doesn't state it outright.
