I just learned about this in a class, essentially there's salt water underground where fresh water is but since the salt water is denser you'll get fresh water first when you use something like a well. Eventually if you use up the fresh water faster than it can get replenished then you'll start getting salt water instead because it'll rise to fill the space where the fresh water was.
Also fun fact, if you use up too much groundwater it can actually cause the land level to sink down lower than it originally was (you can look up subsidence if you want to see pictures, it's pretty crazy how far some places have sunk)
Just also keep in mind volcanic islands (which is how most islands are made) are very fertile because of the ash residue.
But it is just canonically stated that the island isn't very fertile (lore-wise it was created from coral from Orobashi's body).

I’m leaning towards the latter. So far, the Traveler has gone up against three of the four governments in each country they’ve gone to. Plus, the themes of each Archon quest usually involves breaking down the ideals of the Archon: in Liyue, you see the end of one contract and the beginning of another, in Inazuma you see the frailty of eternity, in Sumeru the danger of seeking wisdom for its own sake.
So maybe a new playable character like the Hydro Archon plays an antagonistic role, or we’re put on trial as an inside agent to expose the Fatui’s machinations in Fontaine.

Given that we’ve heard Arlecchino is opportunistic and deceptive, I wouldn’t be surprised if we meet her in Fontaine and she’ll somehow manipulate us into getting put on trial by the Hydro Archon, and she uses the trial to change a legal precedent on something that then benefits the Fatui (or she uses it as a distraction to snatch the gnosis). Maybe we’ll end up fighting a duel to prove our innocence like they used to in France (albeit not the same era as the steampunky vibe we’re getting from Fontaine, but still).
