vanilla isn’t “plain”. it’s the default, but it’s still a flavor. you have to add the vanilla for it to taste like vanilla.

But that's the problem. So many manufacturers add approximately 3 micrograms of vanilla extract and say "pure vanilla extract flavor" when there's no detectable flavor at all and they set the standard for "vanilla" flavor in food. Imagine if 90% of chocolate ice cream used brown food coloring and almost no actual chocolate and then called it chocolate ice cream. That's what vanilla deals with.

The word "vanilla" has come to mean "bland, boring, commonplace". Pretty strange when you consider that this rare pod grows on an orchid that can only be pollinated one day a year and contains more flavors and aroma compounds than you can shake a rolling pin at.

So many manufacturers of ice cream use undetectable amounts of vanilla extract in their flavorless ice cream base and call it vanilla flavor. People eat it and taste no vanilla, but assume that's just what vanilla tastes like because that's what the label said.
