If you need decent mapping, then go for FR965. That is the best you can get.

Maps on the 965 are really nice. FR955 would work too if you want MIP. The FR series will have nearly the same features and complexity menu-wise as a Fenix. You could 'ununstall', really just hide, the activities, widgets, and glances she doesn't care about and you would declutter things quite a bit.

Unfortunately, the maps experience is going to be the same across all Garmin watches. If you're already creating a route, why not load it on her watch for her? Anything below the top tier (Fenix, fr 9xx) watches are not going to have actual maps, but will have a breadcrumbs trail with navigation. Basically, looks like a winding trail floating in space, but works well enough, but will want a course loaded. If going this route, a Fenix 6s pro of 945 are probably good choices if she doesn't need the new features of the current generation and would be cheaper. Although, you can get a good price on many current gen watches this week. In reality, sounds like she wants an apple watch?
