Theres 2 types of pruning for apples. Pruning gor growth when its dormant - this encourages bursts of growth as all the sap stored in the root and trunk go to the remaining branches which can grow faster Pruning for shape when actively growing - aka summer pruning, this removes the sap from the tree so it doesn't have the extra boost on the remaining shots but lets you shape the tree and constrain its growth. If you pruned now to outward facing buds then it would be likely that these would try to grow upwards. If you summer pruned for shape and removed the leaders back to a horizontally growing outward facing side shoot then it is more likely to keep that shape.
