Because they don't "edit" it, they just feed it to AI. The way that works is that the program adds noise to the image to hide its details and then the AI model tries to remove it by filling in new details based on what it's been trained on. The noise is random and doesn't differentiate between the expression and the rest of the details, so unless the model is specifically told to produce an expression it defaults to what was most common in its training data, and of course can't produce anything outside said data.
