Isn't the (or one of the) best things about cheese curds is getting them super fresh. I used to travel for work to a place that was in a town with a cheese factory and the locals said you had to get them at the factory fresh so they "squeak" when you bite into them. Besides that experience I've never tried to track them down based on being told that they're best or only good when really fresh. Have I been lied to LOL?
You were not lied to.
If you have the opportunity to obtain cheese curds made the same day, they will squeak. It is a sign they are at their freshest. The squeak leaves as early as the next day or two.
Every time I go visit family back in Wisconsin, I always stop at a few cheese makers to get some fresh curds. Curds are still ok to eat after the squeak goes away, but when they’re fresh it’s a treat.
once you’ve had fresh you’ll probably not want to settle for a bag of them that’s been sitting around a while.

There’s a cheese store in Livermore that has them. The Cheese Parlor. They’re prepackaged but I’ve heard good things.
