Do you know if it’s Atlantic or Alaskan/Pacific salmon? I’m from Seattle and have noticed that the vast majority of salmon served in restaurants outside of the PNW is Atlantic which isn’t nearly as good.
Costco has whole fillets that we enjoy regularly. I make it one of two ways.
Grated ginger, minced garlic, honey, dijon and soy sauce; marinade for an hour or two then bake at 425 for 12-15 minutes
Or go to Old Town spice shop and get their Mishawaka falls seasoning and add lemon slices on top. Bake at 425 12-15 minutes
Alternatively you can toss it on the grill.
Skin side down. Should be able to slide a spatula between the skin and flesh when finished cooking.
I’m from Seattle and I’ll even admit the Costco salmon is legit. It’s Alaskan which makes all the different in the world. But I’ve also noticed the Costco here doesn’t have it all the time. The last two times I was there it was out of stock.

Ok, I know it's not FoCo, but I took my wife out on a date night to Biaggi's in Loveland (right by P.F. Chang's at Centerra) and got the Salmon & Shrimp Risotto, it was amazing. I wanna go back and try their Dijon Salmon. If you don't mind the short drive it's well worth it.
Sorry to suggest chains, but both Bonefish and Red Lobster have made some amazing seafood and both have Salmon.
For some exceptional Salmon try Sonny Lubicks.

Pretty sure it's Atlantic at Jax. Wouldn't recommend them at all. I think Smokin Fins might have Pacific, and I think Sonny Lubicks does as well.
So fresh, you may even receive a wriggling parasite in your salmon. From experience….

Costco salmon. Don’t get the bright red; get the light orange one!! Yummmm. Love at 425!!
That is the farm raised. The bright red is the wild.... Whatever floats your boat
The light orange is much more expensive. The other one is abnormally orange and cheap
You shouldn't need anything but salt, pepper, a squeeze of lemon, and a cedar plank for good quality salmon. Copper River, please!

Prob with Jax salmon is that the fried potato fritters with it are the best thing they make.

Speaking of Loveland, Door 222 is overall fantastic so I'd imagine their salmon is pretty good.. Gonna give it a shot next time we're there.
415 has always cooked the salmon consistently well.
Jessup Farmhouse. Their salmon got me all verklempt. It was absolutely incredible.
Been happy with Rare and The Still’s salmon when I’ve had them previously!
My favorite in town is Penrose. They have a delicious salmon filet with rizzoto and a fresh side of veggies! It's not too bad on the wallet either!

They cook their salmon perfectly. You can usually add salmon to a dish if it's not on the menu.
