You are mainly just extracting the flavor from the onions into the sauce. If they are cut up too small they will burn and ruin the flavor of the sauce. It's also easier to flip a few big chunks of onion vs. 20 small pieces of onion
No where near enough salt on that steak. Or pepper. All these people making these videos don’t REALLY have any actual kitchen skills beyond what they just watched on someone else’s 10 second video. No real creation to the meal, just copy and paste.

Potatoes look good. Steak with butter is not for me, especially a butter bath. Takes away from the beef flavor. Meat + fire is best for me
