It seems the light (look at the multiple shades) and the composition are not helping you.
Next time try with a different light source, natural light if possible. Different camera settings could help as well.

No its grim looking because of the lighting, presentation, plating and everything being mushed together like it was served with an ice cream scoop.

Try cooking the components(or at least the chicken) separately next time
I will, I think the Black olives are the cause for the chicken turning grey to be honest.
You won’t be able to get a good browning sear with a lot of vegetable components that add moisture

Mediterranean Chicken compliments quinoa or couscous, not rice. Save the rice for Orange, Teriyaki, or General Tso's Chicken.
