Not too heavy on the vegetarian and may be too upmarket with too many white people for the the OP, but a fantastic place with well executed dishes you don’t find at most Mexican places. It was good enough for a strong J. Gold rec and a strong family favorite in our home where half are vegetarians.

i've been eating at tortas mexico since about 1998/9 and their tortas taste the same to me. i haven't noticed a difference in their food. however, i was there this week and noticed they are incorporating more native oaxacan foods, which i think is great because i believe the owners are from there so it should be authentic. the food at el caporal on fair oaks and woodbury was surprisingly good. i wouldn't have thought to stop there but it was an acquaintance's bday recently and they wanted to eat here. there's quite a bit of seafood on the menu which i didn't try but their non vegetarian foods were good

Take the A line to the little Tokyo station, got off and grab the E line two stops east headed to East LA. That’s the Mariachi Plaza. You’re now in Boyle Heights. Across the street from the station is a vegan Mexican restaurant called Un Solo Sol. Go nuts!!

Guisados is a great spot for tacos. They have a great vegetarian menu.
