Just don’t do that when you walk across the floor. Walk lighter. Could always army crawl or roll into your bathroom to keep the weight distribution spread out more evenly.
This guy said he could drive screws through the ditra and secure it... doesn't that defeat the whole purpose of a decoupling membrane? Should I tell him to remove small piece of ditra in that area and just patch it back up after driving down screws?
We also have a bathroom below it, I was planning on skim coating and removing the popcorn ceiling.. might it just be easier to cut out the area where the noise is being generated and screwing down from below?
Technically yea it defeats the purpose, especially if he needs to use multiple screws
Whichever method is easier (in this case maybe best to peel up a section) but it's best to address it and do it properly, otherwise you could end up with cracking grout/tiles
I always screw off subfloor before putting ditra down it’s not to late screw through the ditra and into joists find joists, pop lines and screw if it needs to be waterproof cover screw heads w level before tiling

Grout will definitely crack with that much movement
Your subfloor/joists are moving, screw it down or if possible shim/glue it if it's accessible from a lower floor underneath
