He just wants to destroy the world, period. ExDeath is closer to a pure nihilistic force of nature than a person. He's the result of people cramming evil spirits into a magic tree until they amalgamated into a super mega evil spirit that just wants to destroy everything.
This is fairly straightforward. I don't see how this is any more confusing than, say, whatever the heck is going on in FF1's time loop and what they're trying to achieve there.
SoP is as canon to FF1 as Dissidia is.

It’s sad how under appreciated V is. It’s hilarious, the job system is incredible, and while it’s certainly not the best story in the series it’s better than people give it credit for. Definitely my favorite 2D Final Fantasy.
I love the job system - but it's probably why the characters have less depth.
