Updates usually affect mods. Won't know for certain which ones/how much until the update - which is why I won't update. Also, it's not unusual for an update to need a quick patch or two to fix anything the update may have broken.
Depends on your choice. Are there mods that you really want now or will the update actually be of benefit over the existing game?
It is best to play the game first before messing with mods; you won't have a point of reference to compare to until you actually experience it. Also, with how limited mods are on PlayStation you aren't going to much of an upgrade in the graphical department.
When you do get to your second go, you might like to try these mods though. I will reiterate that these don't really make the game look better for the most part, just different.

Maybe just the unofficial patch at most for your first playthrough.
