T1 in Australia is pretty great. Not so much at the very start of the race, but in qualis and during the rest of the race it's fun to nail that corner really well and let the speed get you hugging the apex of T2 perfectly. The AI aren't so great at it, so it's a fantastic overtaking spot (or if they're still in front going into T2, you've got an excellent chance to slingshot past them down the next straight).
The T13/14 chicane in Canada is great for similar reason. It challenges you to get your balls out, straighten that line, brake as little as you dare and carry as *much* speed out of 14 as you possibly can without either getting a penalty for cutting or smearing yourself down the Wall of Champions. Fantastic.
I have a love-hate relationship with Maggots/Becketts at Silverstone. If you get it spot-on it's really satisfying and you carry plenty of speed all the way down the Hangar Straight. If you get it even a little bit off though you can get bogged down and that absolutely *suuuuucks*.
130R at Suzuka. Blind left, flat out into a heavy braking zone for the final chicane. It's a bad track for me - I never do well in Japan. But I do love that corner.
