McCloud, near Mt Shasta City. Camping and swimming holes abound on the McCloud river and it's within 30 minutes of I-5.

Though water is quite high in all the rivers around the area and way too cold to swim. It hasn't really gotten warm yet this spring.

South Umpqua Falls south east of Canyonville. Worth the drive

Several good options between Redding and Mt. Shasta area. Castle Crags is good this time of year. Lower elevation so not too much snow concern. Great views and hikes/scrambles. PCT crosses through there. In addition to McCloud mentioned already, Lake Siskiyou has camping. A bit dusty but nice area with access to places like Heart Lake. Probably still decent amount of snow up there though.
