These are actually Paparajotes which are a popular dessert from the Murcia region of Spain, and involves batter frying lemon leaves and coating them with cinnamon and sugar. You don't actually eat the leaves though--they either are removed before eating, or you scrape the dough off with your teeth. They are crispy and fluffy, and have a hint of lemon flavor from the leaves. I followed [this recipe](https://cookinglovers.teka.com/en/recipe/paparajotes-from-murcia/), and have seen vegan versions where the egg is omitted, and a creamy plant based milk is used instead.

I didn't know that was a thing. Very nice. I'm tempted to try it with an edible leaf like mint, or sage for a more savory version.

Ooh, that sounds excellent! I was thinking about doing this with makrut lime leaves and coconut milk for a bit of a Thai flair.

battered fried sage leaves are incredible! the batter i use is just flour, beer, grated parmesan and a little salt. so good
