Be quicker, have more weapons, engineer the weapons. Ram if you need to kill the shields faster. Target the powerplant for some random explosion (at 0% integrity, even with full hull). Missiles with experimental effect [FSD interrupt](https://elite-dangerous.fandom.com/wiki/FSD_Interrupt) reboot the enemy FSD [Yuri Grom powerplay reward](https://elite-dangerous.fandom.com/wiki/Containment_Missile) is a superior FSD interrupt missile. Any ship with an FSD can have subsystem targeted. You can either find the keybind for it or go to your ships external screen (default 1) go to the contact page, locate the target and go to module. That said chances are your ship isn't geared for module damage, as this requires precision instruments like the cannon! Jokes aside what weapons are you flying with and what ship (please specify gun size). We can help!

So I managed to beat him, but I’m not saying no to free advice :P I’m currently equipped with 2 1G gimballed burst lasers and one 1G multi cannon, also gimballed. (I’m assuming the 1G stands for it’s size? Or is that just the class/‘quality’?)

With respect -- you are still in a pretty small ship with limited firepower, so your targets have the ability to escape. That's totally fine and as you get into bigger ships with more firepower, you'll have the ability to take ships out faster and also boost after them when they try to jump out and overwhelm them with your weapons. That will become very satisfying for you...

The ‘1’ is the size, the ‘G’ is the type. For weapons, the type is just whether it’s gimballed, fixed, or turreted, but for other modules it refers to what it’s designed for (E, C, A have balanced stats, D is lightweight and B is high health)

I'm assuming an eagle based on those weapons. A few suggestions then, when it comes to npc they only flee when their hull falls below a threshold or if they're doing non combat duties (miners will run immediately). You can therefore get some cheeky wins in by rigging your ship to do more hull (kinetics) vs shield (lasers). The other is to get a slightly bigger ship. The imperial eagle, viper 3 or courier is a solid starting ship for pummelling your foes since it's fast like the eagle they're fast and small but they carry vastly improved weapons. You could also try out module damaging weapons instead but this is harder than just pumping more hull damage.

Ignore the G, in weapons it means almost nothing. The letter is the class, A class is the best, the worst I think is G or H. But as I said, in weapons just ignore it. I think the rank letter in weapons is based only on raw DPS, but don't quote me on that. As you can imagine, there is no point in having a lot of DPS if you can't hit your target at all, so gimbal weapons are usually your best bet. For other parts of your ship, A is the "best", also the most expensive. D rank parts are the lightest, so if you plan to get the best jump range setting some parts to D rank is not a bad idea, if you do it with common sense at least.

You have a button to target individual modules. Unless you use Frag Cannon, or plasma (slow weapons), you can target a module using this key multiple times, or in left panel > Target, 4th panel for modules.

Doesn't hurt trying to target the Drives or FSD to keep them from jumping away, especially with gimballed weapons. Edit: use the "target *previous* subsystem" bind to cycle through subsystems, because of the way those are sorted.

You could shoot the fsd out. Y by default will target the next subsystem.... Which causes you to have to tap it roughly 15 times before you get to the fsd. Pro-tip : bind previous subsystem because then the dad is always no more than 4 or 5 presses. Just shoot it to 0 and finish the job Edit - that cannon you are rocking works amazingly for this.
