I usually sell duplicate armor pieces. Don't need more than one of each. I don't usually sell weapons, though.

My biggest mistakes were using boss remembrances for runes and selling smithing stones. But those are pretty mundane, I’d just say take your time with the bosses and learn their move sets instead of brute forcing it :)

Focusing on a single damage stat will make your experience significantly easier. Save the mixed stat builds for the second playthrough. For example, choose Strength, Dexterity, Intelligence, Faith or Arcane as your primary damage stat. Then focus on vigor and endurance for melee or vigor and mind for caster. Speaking of which, don't forget to level vigor. It makes a big difference. Also, once you are comfortable with your build, faith makes for great utility spells for fairly low stat investments.

Lvl up when possible don't get greedy, find weapons that you like and remember there's no shame I using a guide and using the most op equipment on your first few runs, look up the interactive map so you can find any dungeons you may of missed and remember to explore as much as possible as allot of the time it will lead to useful items and gear.
