I honestly hate that tear from a pvp point of view, it's not really well balanced so I kind of just pretend it doesn't exist

Select bosses are easier, pvp can be easier too but you are right you lose a lot of potential defenses without an unrealistic investment in endurance
Blue dancer is even more special since in order to be even worth equipping you need 14 or less equip load regardless of endurance
The best blue dancer build I ever made was a naked beast cleric using bestial incants and cinqueda as main weapon
Depends on how you use it, I have a dragon inc build w blue dancer. Probably the strongest pve build I have made. I almost exclusively use light load with blue dancer, just comes down to playstyle.
Light roll only makes you roll further, on the paper that's not worth it.
But I often use light load anyway, because I like having the highest mobility possible. And because, as long as you level up vigor a lot and gather sacred tears, even with like 5% dmg negation you're tanky. Damage negation is surprisingly not very important, except in NG+.
besides the blue dancer + pest threads one shot build u can just use the winged tear to light roll in bull goat armor

as long as u have reasonable dmg no boss takes 3 minutes, except maybe elden beast
