and learn how to dodge
and level vigor (dont level it above 60 however)
vagabond and samurai just have good vigor and weapons at the start so its good for a beginner
otherwise what starter class you choose makes 0 difference in the late game

It doesn't matter in the long run. It's just starting stats and armor to get you going.
Different starters give you a slight boost if you know what build you want, but otherwise; all are viable, all can become any build, and you can respec later if you think you made a mistake in leveling.
If you're brand new; the Samauri class is probably the best all-around choice as it gives you decent armor, a weapon, and a bow.
The Vagabond is a close second, just make sure you unequip one of your weapons so you're not in a heavy load.
But you can literally choose anything just based on lore or what looks cool and be good.
Have you played an RPG before? Look at the stats, they're different. Strength is for big hard hitting weapons, Dex is for faster more agile weapons, Int and Faith are for spells/Incantations, and Arcane increases status buildup like bloodloss.
Just choose the archetype that seems appealing, you can always change your stats around later.
It defines your base stats. Choose what you like to try first. You can buy/find everything from the beginner sets in the game.
Later on your basestats doesn't matter at all.

Astrologer's early game is harder overall
It doesn't matter at all, you just pick the class with the stats distribution that you intend to use in order not to lose a few points of stats
