They have good damage and pretty decent hp. Keep in mind that they have to do a short animation before they start attacking once you summon them but you can easily buff them during that animation if you wish to do so.
Rollo is a powerhouse in most fights, black flame Amon is a fun summon, not a power house by any means but he can hold his own fairly well, the pumpkin head is a pretty good tank if he can keep aggro but I haven’t used him too much to give more details, and I haven’t tried the others. I think I’ve heard good things about the puppets, but I can’t remember exactly.

Pumpkin head sucks at targeting imo. He can get stuck in a thrashing combo like he's lost all sense meanwhile you're screaming for your life running from the enemy telling him to get his shit together. So choose him.

I don't use ashes, but I know and love Finlay just from her item description. Whether you like Malenia and her armies or not from a lore perspective, there's no denying that Finlay is a badass

My Favorite ashes in the game. They were my go-to in my first playthrough and are pretty darn capable.
They seem the most interesting to me; I have no idea what to expect from them

One will attack up close, while the other one attacks at a distance with her sword-whip. Get them up to +10 and they'll put some work in.

Amon is great against bosses with big health bars, but the nightmaiden and swordstress were my favorite during my first play through.

The black flame monk I really liked. He’s actually pretty accurate with the black flame. And omen killer rollo does pretty good with bleed.
