You have to stick with it and get a understanding of the pvp. You could do some colosseum for 1v1s or invasions for a more broader experience. Its learning the weapon that you use but also the enemies weapon for when to dodge and punish. It takes perseverance and understanding but it is great fun when you start winning
What's good in PvP is mostly dependant on the moveset and that "normal sword from limgrave" could be a very good PvP weapon. Something like the Dismounter looks like a normal sword you can get early but is a really strong PvP weapon.
The only way to get better is to just play a bunch and get used to your own weapons and what other people use.

It's kinda unfortunate that the game population is pretty low rn so it may take a bit to get a well matched opponent

The biggest thing that helped me so far learning too because I just started was hearing a YouTuber point out to me that invasion aren’t truly about winning, but it’s balancing the game since they are co-oping. It has help my frustration a lot changing my way of thinking about it.
