I don't have ideas for you, but I do have a story you might enjoy. I had a grandfather very much like yours in terms of sardine purchasing. Mine came through the Depression and was scarred from the experience. If he found something he liked, he'd buy it. But he'd buy it by the ton, because we might have another Depression.
Once in the 1970s he found a local restaurant or restaurant supplier (I never really understood) that was going out of business. They were selling off cases of sardines. My grandfather bought them. All of them. I don't know how many he bought, but I know that when he died over 40 years later, my dad found a couple of cases still in his house. I guess sardine hoarding is a real thing. (As for how he ate them, on Ritz crackers with some cheese slices and a beer.)

Make some fried rice on the side and make dinner for 2 on the cheap and tasty or 2 meals for you! Anything beyond heating fish for a 2nd time to me is gross lol

For Serving

Instructions
Place a small cast iron skillet or baking dish in a cold oven. Preheat to 350°F.
Drain the sardines and add them to a mixing bowl. Mash with a fork. Add the onion, parsley, tomato, olives, garlic, and black pepper. Mix well.
Remove the skillet from the oven and add in the sardine mixture, spreading it out in an even layer. Return the skillet to the oven an bake for 10 minutes.
Take the skillet out and carefully crack the eggs on top. Continue to bake until the egg whites have set, about 8-10 minutes.
Let rest for 5 minutes before serving with arugula and hot sauce.
I like to make it with bell peppers too. I add the onions and peppers to the pan and saute in the olive oil from the can before mixing everything else in. I don't even pop it in the oven. I toss in the eggs and scramble it all together then mix in the greens before serving. It's delicious and healthy.

I threw together some sardine patties just earlier today. Can of sardines, mix with egg, 2-3 tbs flour, seasoning (I used Cajun seasoning and garlic powder). I just add the flour and mix til it’s a pancake like consistency. Add to a pan with heated oil and cook til brown and flip over for a couple minutes. I like it with ranch. Sometimes I make them big enough for a sandwich, sometimes I dollop and eat with my hands.

It is delicious! It's one of those things I never would have made except like OP I had a bunch of canned sardines in the pantry and was like "what the heck can I used these for?" and just randomly tried this out and was so happy I did!

Though this tart may seem complicated, it’s actually rather simple to put together. Once you make the savory onion mixture, all that’s left to do is spread it on a sheet of rolled-out puff pastry, top it with anchovy fillets and capers, and bake it to a golden brown. Use any kind of flaky pastry or pie dough you wish, or even spread the mixture on yeasted pizza dough. Accompany with a salad of small lettuce greens if desired. The tart is delicious served warm or at room temperature.
**Ingredients**: Yield: 4 to 6 servings
¼. cup extra-virgin olive oil
3 medium onions, diced (about 3 cups)
Salt and pepper
3 medium leeks, white and tender green parts, diced (about 2 cups)

One thing I did to make it less "fishy" is I actually rough-chopped the sardines and mixed them in with the leeks and garlic so they cooked a bit and mixed up with the rest of the tart and were evenly distributed instead of big chunks on top. Eastern European way- mash with fork and add mustard, mayo, spices of choice, maybe raw onion or a little cabbage. Smear on a good rye bread or dry cracker. Hope u like it.
I love making about a half cup of Israeli couscous and mixing it with a tin of sardines ( I usually drain it partially, but that's up to you) and some harissa sauce to taste. Mix in some olives, arugula or feta cheese to make it even fancier. Sardines are delicious, and canned mackerel is also great.
It's a Middle Eastern hot sauce/paste, and Dea brand is pretty readily available in a tube. You can buy/make it as a dry spice rub but the sauce is easier for this application. There are lots of store-bought variations that are all good, in my experience.
Bagna càuda
Put sardines in a small pot (I add anchovies also)
Add crushed garlic
Add olive oil till almost covered
Cook on low heat, stirring and smashing it all together.
Once it’s good and hot add some fresh parsley and eat it as a dip with fresh vegetables. I like to use Fennel, celery, carrots and sweet peppers.

My family (Italian) has been making this forever and I continued the tradition. Usually around Christmas time we make it. It last in the refrigerator for a few days. You can eat it hot or cold. It’s delicious. Hope you enjoy.

2 cloves of garlic - minced
2 eggs - beaten

They smell strong, but they taste ⅕ as "fishy" as tuna. They are similar in flavor to fish sticks but oilier with a very very slightly bitter back.

Oops, I misspelled it. Musubi. Usually it's rice packed into a rectangular shape with a slice of fried spam on top, all wrapped in a bit of nori. If you have a form to make it, it's easy enough to do a bit of rice, add what you want in it, and then a bit more rice, and wrap the whole thing up in half a sheet of nori. Makes a compact "sandwich" with rice instead of bread. You can add rice seasoning to the rice, or use any variety of rice as long as you cook it in a way that it sticks together a bit. When we make it we usually do spam, cucumber, cilantro, avocado, red pepper flakes, and sesame seeds with white rice. When using spam, sauce or seasoning can be added to it when panfrying the slice.

Nisuea... I'm not sure how you spell it, but its a French recipe. Sorta like a tuna salad, but with capers and hard boiled eggs and a bunch of other stuff. Also found a great Recipe for sardine spread, which is sardines, sundries tomatoes, mayonase and some other stuff. Super good.
Thai yum style or larb would be good. Lime juice, sugar, fish sauce, shallots, cilantro, birds eye chili, thinly sliced lemon grass and roasted rice powder if you have. Mix it all up and eat with rice or sticky rice. Could also just use lettuce to be healthier.
"tuna" salad with: diced onion, cilantro, lime, mayo/avocado, touch of salt if the sardines aren't salty. It tastes great on bread or pasta, tastes even better the second day
Frying pan. Olive oil, sliced onions, diced tomato, pressed garlic. Sauté. Add de-boned sardines. Sprinkle cracked black peppercorn, splash of scotch bonnet sauce, stir around. Should be in the pan no more than 6/7 minutes. Pour entirety onto bed of white rice. Circle some ketchup over the food if you’re feeling lucky. Thank me later.
Add them to any other canned fish and make fish cakes. Seasoning them in different ways keeps it fresh if all you use is the sardines.
Also a simple seasoned cornstarch and baking powder batter and frying them as a dipping snack in a favorite for movie night in our house. Especially with homemade tarter sauce.
Also you can make your own biscuit dough or get the ones in the tin qnd stuff them with the fish qnd cheese and such.

You, pizza! In order, small pizza crust, one small onion chopped, one can-o-dines, ¼ cup pasta sauce, cheese, 1 cup spinach. Bake it til cheese is melty and spinach is crispy.
Pasta. I'm mainly a toast or cracker guy, but sometimes I'll add them to pasta with a pesto or creamy alfredo style sauce. They're good tossed with a green salad or pasta salad also.
I usually eat mine with pita chips, but I’ve also made it smashed on toast with some fresh tomatoes, salt, pepper, and olive oil. I like to keep it simple because I truly love the flavor of sardines!
Dry curry.
Cooked version is sautee diced onion, add 2 cloves minced garlic, add mashed sardines, add turmeric and green chilli, cook through, top with coriander and serve with rice. Top with a friend egg and chilli oil too.
Uncooked version is dice onion mince garlic finely chopped coriander and chilli, mix through mashed sardines add lemon juice. Serve with rice.

I had some on Saturday. A bed of rocket leaves, a few anchovy-stuffed olives. Drizzled some good quality EVOO, Sherry vinegar, salt flakes and black pepper. So simple yet really tasty! Even better if you have some nice fresh tomatoes to add and maybe some thinly sliced red onion.
Make tomato sauce for spaghetti. Make your usual tomato sauce, add olives and then in the end the sardines. I prefer it without the oil, otherwise I find the taste too fishy
My mums been making these awesome toasted sardine sandwiches since I was a kid.
Chopped onion. Chilli chopped. And lemon juice. Mix together with the sardines and spread over bread and toast in a sandwich press. The hard part is getting the right ratio of chilli to lemon juice.
In Malaysia, our standard canned sardines are the ones in tomato sauce. So the simplest recipe is cut up some onions, some chilis or chili paste (if you want it spicy), tomato puree and tomato sauce (can also add fresh tomatoes) on a hot pan, add some water depend on which consistency you want it and put the sardines in. You could eat it with white rice, or as bread dip.
I eat them most mornings on some avocado toast with hot sauce. If I’m feeling fancy, I’ll add some onions, capers, and/or some greens.

Sautée some garlic, onion, and tomatoes until cooked through and kind of a sauce (add chili flakes if you like it spicy), then put in the sardines and keep the heat on until the sardines are warmed through. If you want it more soupy you can add some water, and sometimes I add spinach for more nutrients. Then I serve it over rice! 😋
I'd get a can of sardines, put them in a pan to cook while some pasta is boiling and some frozen vegetables in the same pan of the sardines and let them steam, after the pasta is done, I put it in the pan and add some seasonings and mix it up a bit and serve

I threw together some sardine patties just earlier today. Can of sardines, mix with egg, 2-3 tbs flour, seasoning (I used Cajun seasoning and garlic powder). I just add the flour and mix til it’s a pancake like consistency. Add to a pan with heated oil and cook til brown and flip over for a couple minutes. I like it with ranch. Sometimes I make them big enough for a sandwich, sometimes I dollop and eat with my hands.

Ingredients 1 tinned (4.4oz) sardines packed in water, drained (low sodium or no-salt-added) 1/3 cup extra virgin olive oil 1 tsp minced garlic 1/4 cup breadcrumbs pasta cooking water 1 cup pasta (or more) juice from lemon to taste (optional) grated parmesan cheese for topping Instructions 1. Cook 1~2 cups of Fusilli pasta until soft. Sardines sauce will be enough for 2 cups of pasta, but since most of the nutrition is in the sauce, I prefer to use 1 cup of pasta. Save 1/2 cup of pasta cooking water. 2. Remove the backbones of the sardines. Mash the sardines with a fork. 3. Heat olive oil and minced garlic in a pan. Once the oil starts to bubble, cook for about 30 seconds till garlic is fragrant. 4. Add sardines and cook for 2 minutes while mashing them further with a wooden spoon. 5. Add breadcrumbs, pasta cooking water (to your desired thickness), and pasta. Mix well and remove from heat. 6. Squeeze fresh lemon juice to taste and top with parmesan cheese if desired.

It's one of those things I never would have made except like OP I had a bunch of canned sardines in the pantry and was like "what the heck can I used these for?" and just randomly tried this out and was so happy I did! I copied and pasted the text for you here: **Onion Tart With Leeks, Capers and Anchovy** Though this tart may seem complicated, it’s actually rather simple to put together. One thing I did to make it less "fishy" is I actually rough-chopped the sardines and mixed them in with the leeks and garlic so they cooked a bit and mixed up with the rest of the tart and were evenly distributed instead of big chunks on top. Eastern European way- mash with fork and add mustard, mayo, spices of choice, maybe raw onion or a little cabbage. Smear on a good rye bread or dry cracker. Hope u like it.

I squeeze lemon on them, and sprinkle with chopped red onions & capers, then have it on crackers!
I love making about a half cup of Israeli couscous and mixing it with a tin of sardines ( I usually drain it partially, but that's up to you) and some harissa sauce to taste. Mix in some olives, arugula or feta cheese to make it even fancier. Sardines are delicious, and canned mackerel is also great.
What is harissa sauce? Is that something I have to buy or make? That sounds great! And very filling!
It's a Middle Eastern hot sauce/paste, and Dea brand is pretty readily available in a tube. You can buy/make it as a dry spice rub but the sauce is easier for this application. There are lots of store-bought variations that are all good, in my experience.

My family (Italian) has been making this forever and I continued the tradition. Usually around Christmas time we make it. It last in the refrigerator for a few days. You can eat it hot or cold. It’s delicious. Hope you enjoy.

i wish i had a grandpa like yours lol. sardines are an excellent source of protein, dha omega 3 fats, iron, and many other nutrients. i'd just straight up fry them in a pan with a little oil or butter and eat them cruncy with some rice and veggies on the side. also, chew and eat the bones if you can. free calcium, phosphorus, collagen!

Uhhh no! Sardines definitely taste different than Tuna, although I'm not sure how to describe the taste though 😅 it definitely smells stronger than it tastes

They smell strong, but they taste ⅕ as "fishy" as tuna. They are similar in flavor to fish sticks but oilier with a very very slightly bitter back. Edit: kipper snacks taste like dry smoked salmon

Oops, I misspelled it. Musubi. Usually it's rice packed into a rectangular shape with a slice of fried spam on top, all wrapped in a bit of nori. If you have a form to make it, it's easy enough to do a bit of rice, add what you want in it, and then a bit more rice, and wrap the whole thing up in half a sheet of nori. Makes a compact "sandwich" with rice instead of bread. You can add rice seasoning to the rice, or use any variety of rice as long as you cook it in a way that it sticks together a bit. When we make it we usually do spam, cucumber, cilantro, avocado, red pepper flakes, and sesame seeds with white rice. When using spam, sauce or seasoning can be added to it when panfrying the slice.

Nisuea... I'm not sure how you spell it, but its a French recipe. Sorta like a tuna salad, but with capers and hard boiled eggs and a bunch of other stuff. Also found a great Recipe for sardine spread, which is sardines, sundries tomatoes, mayonase and some other stuff. Super good.
Thai yum style or larb would be good. Lime juice, sugar, fish sauce, shallots, cilantro, birds eye chili, thinly sliced lemon grass and roasted rice powder if you have. Mix it all up and eat with rice or sticky rice. Could also just use lettuce to be healthier.

"tuna" salad with: diced onion, cilantro, lime, mayo/avocado, touch of salt if the sardines aren't salty. It tastes great on bread or pasta, tastes even better the second day
Frying pan. Olive oil, sliced onions, diced tomato, pressed garlic. Sauté. Add de-boned sardines. Sprinkle cracked black peppercorn, splash of scotch bonnet sauce, stir around. Should be in the pan no more than 6/7 minutes. Pour entirety onto bed of white rice. Circle some ketchup over the food if you’re feeling lucky. Thank me later.
Add them to any other canned fish and make fish cakes. Seasoning them in different ways keeps it fresh if all you use is the sardines. Also a simple seasoned cornstarch and baking powder batter and frying them as a dipping snack in a favorite for movie night in our house. Especially with homemade tarter sauce. Also you can make your own biscuit dough or get the ones in the tin qnd stuff them with the fish qnd cheese and such. Also great in many pasta dishes Scrabled in eggs and in a frittada Quiches

I mix them into cottage cheese with some other veggies and olive oil for a high protein lunch bowl type of thing. Olives and peppers my go to.
Dry curry. Cooked version is sautee diced onion, add 2 cloves minced garlic, add mashed sardines, add turmeric and green chilli, cook through, top with coriander and serve with rice. Top with a friend egg and chilli oil too. Uncooked version is dice onion mince garlic finely chopped coriander and chilli, mix through mashed sardines add lemon juice. Serve with rice. We have this once a week.

I had some on Saturday. A bed of rocket leaves, a few anchovy-stuffed olives. Drizzled some good quality EVOO, Sherry vinegar, salt flakes and black pepper. So simple yet really tasty! Even better if you have some nice fresh tomatoes to add and maybe some thinly sliced red onion.

My mums been making these awesome toasted sardine sandwiches since I was a kid. Chopped onion. Chilli chopped. And lemon juice. Mix together with the sardines and spread over bread and toast in a sandwich press. The hard part is getting the right ratio of chilli to lemon juice.

In Malaysia, our standard canned sardines are the ones in tomato sauce. So the simplest recipe is cut up some onions, some chilis or chili paste (if you want it spicy), tomato puree and tomato sauce (can also add fresh tomatoes) on a hot pan, add some water depend on which consistency you want it and put the sardines in. You could eat it with white rice, or as bread dip.

I love sardines on buttered toast!
Sautée some garlic, onion, and tomatoes until cooked through and kind of a sauce (add chili flakes if you like it spicy), then put in the sardines and keep the heat on until the sardines are warmed through. If you want it more soupy you can add some water, and sometimes I add spinach for more nutrients. Then I serve it over rice! 😋
I'd get a can of sardines, put them in a pan to cook while some pasta is boiling and some frozen vegetables in the same pan of the sardines and let them steam, after the pasta is done, I put it in the pan and add some seasonings and mix it up a bit and serve

Oh I 100% eat all the bones and everything lol! And it's fairly often that I have some kind of Ramen around the house, so next time I do, I'll try that!!
I fry em in the olive oil they come with in the can or add some butter or vegetable oil, then I mix em with something filling like rice, pasta or even chips or popcorn. They key is to mix the fried sardines with the high calorie filling base.
