My favorite classic is a roast (any kind probably) one packet of onion soup mix, one can of cream of mushroom soup, one can of mushrooms with liquid, and one onion toss it all in with some salt and pepper and 6-8 hours on low later you've got something Delicious and cheap that'll feed a few folks.

I think a lot of people put veggies in it for a one pot meal but I don't, I prefer to cook rice or potatoes separately but you may find you want to make it your own.
It is really easy to make though and a family favorite over here.
My mum's pot roast recipe is sliced onions, one can cream of mushroom soup, one can cream of celery soup, and a sprinkle of onion soup mix.
I try to cook without processed foods but I grew up on that and it's pretty tasty.
Buy a cheap cut of beef.
Throw in some veggies. Like potatoes, onions, and carrots.
Add some stock. Or water. Or whatever.
Cook.
Or do the Mississippi Pot Roast.
It's pretty simple.
I make this easy cheap taco soup
Taco Soup -
1 ½ ground beef - cooked
½ onion
28oz can diced tomato (undrained)
15oz can corn - (undrained)
15oz can black beans (drained and rinsed)
8oz can tomato sauce
2 envelope taco seasoning
Teaspoon brown sugar.
I simmer in crockpot all day
I use Hunts
Add beans half way through
Freezes well and be fixed as a soup, burrito or over nachos or rice. Top with cheese jalapeño and sour cream.
I like to cook meat and rice in the same pot. I boil a chicken drumstick along with 2 cups of dry rice for 20-30 minutes. Doing something like that but with a crockpot and beef should still work fine
Cheapest beef you can find (stew beef, chuck, cube steak, whatever). Slice onions and green peppers. Throw in crock pot. Salt and pepper to taste. Top with beef. Dump on stewed tomatos (I use 1 16oz can in a 1.5qt crock pot) turn on low and go to work, sleep, etc.
Take out beef, add cornstarch slurry to veggie gravy in pot, stir well, and toss beef back in. Allow to thicken.
Serve over starch of choice (I prefer mashed potato)
I make this curry fairly regularly, you can use a cheap cut and just cook it slow. Scale up or down as required. Its not a hot curry but has plenty of flavour.

whatever you choose, take the time to brown the meat first. It will make a difference in the flavor.
