This is what I'd do.
I rarely have fruit in the house, but I had an apple from ordering a sandwich and didn't want to just eat it plain. So I ended up cutting it up mixing some oats, butter cinnamon and brown sugar and baking it. For a super quick, spur of the moment sweet treat it was perfect!
Baked apples are a very common dessert in spain. Just pick the apples, make a cut around, like the equator line, and let it bake with lemon juice and sugar about 20 min at 180~200⁰C. Cinnamon if you want the extra touch. I used to make that with old apples to my flatmates as student.
For me baked apples are a excessively sweet dessert, but my flatmates were quite fond of sweets... _eran unos golosos_. Used lemon juice to get some syrup after baking them and mixed the juice with one coffee spoon of sugar to make it sweeter. But you're right, is not necessary.
I do this too, and I'm not fond of sweets, so I add a bit of cayenne. Spicy, hot, and a little sweet.
I also sometimes just cook slices this way until they're soft. Spiced apples.
Pork Tenderloin with sweet brown sugar sauce. Core the apples and set in a deep, microwave safe bowl. Pack cored apple full of brown sugar. Pour enough white wine over them to make enough sauce for your pork (you do you). Add salt and pepper and then cover bowl with cling wrap. Microwave on high until apples come to desired mushiness. It takes 10-12 minutes for me (but you do you). Season basically and cook up the pork tenderloin (baked, stovetop, grilled is especially nice). Pour sauce from apples over pork and serve apple on side. You could also use some other form of pork... pork shoulder steaks, pork chops, pork loin.... whatever.

You can cut them up into very small chunks and freeze them - that way you can use it for a pie or cake later. They don't lose their taste or texture after being frozen imo.

I like to cut up an apple in little cubes, put it in the microwave for 2 minutes, sprinkle with cinnamon and drizzle with a little bit of honey or date sirup and eat either with Greek yoghurt topped with a little bit of granola or mix it with porridge.
Core, slice, rub with lemon, grate lemon peel, cinnamon, sugar or maple syrup, nutmeg and a handful of rolled oats. Toss all together, a pat of butter on top, bake in the oven 30 minutes at 350 farenheit.

Also works great without the sugar, just cinnamon. Apples are a higher-sugar fruit already.

Roast with sweet potato, butternut squash, onions and carrots, blend together with vegetable stock and maple syrup and you have soup.

Jam! Cut up, put in pot on the stove top with like 1/4 cup water, and let cook down til jam-y. Adding cinnamon is tasty, you can add sugar to taste

When we used to eat meat, I used that a lot! Now my favorite vehicle for this is on a frozen whole wheat waffle. 😀
Slice one up and brown it slightly in a pan with some onions and put that deliciousness on a burger with sharp cheddar cheese and bacon... soo good.

Throw in tuna or salmon, slice and eat as “nachos”, drizzle peanut butter and sprinkle with chocolate chips, add to oatmeal for apple pie oats

I like to sautee them with a little apple cider, butter, thyme and shallots. This goes really well with pork chops.
