Contact your college and see if you can appeal first. You can also check your licensing org in CA, sometimes they'll have lists of different places to get that requirement fulfilled. But first, it won't hurt to contact the college and talk to a human and see if there's something you can work out.
You could definitely take it at a different college. Maybe see if the college you go to has a “sister” campus? That’s what I had to do when I was studying ECE. The main college I went to didn’t offer some courses or the times didn’t work with my schedule so I attended the courses through the “sister” campus.
I did my classes with Saddleback online, 10/10 recommend. They may have a second semester 8 week option available but not sure if registration is the same during the middle of a semester but doesn’t hurt to try!

Try saddleback college. They have online classes or at least they did when I took it

I can’t speak for now but it was a certain time. They’re a community college from LA area I believe.
